Golden Brown Homemade Eggo Waffles

Scenario: You’re home relaxing and get a sudden craving for waffles. You haven’t busted out your waffle maker in ages, and you begin to do a mental checklist of what you have in your kitchen only to realize you’re out of batter. Cue the crankiness and dread at the idea of having to trek out to the store, but wait! I’ve got you! There’s a staple already in your kitchen that will work just as well: EGGS!

Yes, that’s right. If you’ve never ventured outside of making waffles in your waffle maker, you’re missing out. You can make an omelette, or what I’m calling a Homemade Eggo (drop the o) Waffle.

It’s so simple. Here’s what you do:

  • Go about the way you’d normally prep your omelette. Beat the eggs, and add in milk. Add in a dollop of mayo to make the eggs nice and creamy so that your waffle will turn out fluffier.

  • Prep any additional ingredients. For the one I made that’s pictured below I kept it simple and added in Swiss cheese.

  • Pour the egg batter into your waffle maker and get ready for an omelette-waffle…omffle? Wafflette? Whatever you want to call it, just know that you’re going to enjoy the same experience with a nice crunch as you bite into the crispy golden brown outside and a nice pillowy inside.

Overall, I can think of a few situations where this idea would come in handy. If you’re having brunch at your place and know you’ll have a gluten-free friend dropping by but you aren’t totally confident in making gluten-free batter, then do this. Your guest won’t feel left out as you serve waffles because this looks exactly the same. It’s also a fun dish to make for your kids if they don’t like the look or consistency of “regular” scrambled or fried eggs. (Side note: When I was little I hated yolk for some reason. I know, I know- it’s the best part! It was to the point where I would take it out of my hard-boiled eggs at family Memorial Day picnics. By the end of the day, I’d have a yellow mountain of mush in my napkin that my family would make fun of me for). Generally, It’s also a bit healthier, too - depending on what you put in it- since you’re consuming protein instead of a traditional batter mix.
